ESSENTIAL FATTY ACIDS
Essential fatty acid (EFA) composition of foods has been greatly reduced by modern food processing. These good fats can be found in sources such as raw walnuts, fresh salmon, and ground flax seeds. Because EFA's are necessary for the normal function of all tissues the list of symptoms of EFA deficiency is long. (Modern Nutrition in Health and Disease Shils et al, 1994 p 74). Essential fatty acids, are critical for normal fetal development and for cell membrane function relating to neurological and mental disorders.
